I really, really admire ALL waitstaff, but ESPECIALLY good waitstaff. It seems so difficult. Remembering all of that stuff AND being charming AND nice AND not tripping and spilling stuff everywhere? Man! You rock!

I’m reminded simultaneously of a) a trick we used to do cocktailing where you slot the bottoms of as many wineglasses into the fingers of one hand as possible? I think I did 32 once, and b) the time I poured an entire pitcher of Pepsi down a woman’s backless dress. Iced Pepsi.
